Mushins


I have a friend who loves juicing and is always looking for uses for the ensuing ‘mush’. So far her best result is to use it as a face mask. Granted, she has beautiful  Irish skin. I think more with my stomach. 

I wanted to try some apple carrot and ginger juice to see if I could just rely on my trusted Magimix food processor or if I need a juicer (the cleaning process convinced me). 6 carrots, 5 apples, a thumb piece size of ginger later and I had 1.5 glasses of juice. Shockingly wasteful in my opinion. 

But what to do with all that sweet smelling mush? Mushins, of course! As in ‘Mush Muffins’ (geddit?)

So I mixed the mush with:

3 eggs, beaten

100 ml milk

2 tbsp melted butter

In a separate bowl I mixed:

150 ml porridge oats

300 ml spelt flour

100 ml sugar

2 tbsp baking powder

2 tbsp cinnamon

Tip all the wet mixed ingredients into the dry mixed ingredients and stir.  

Pour into muffin pan, bake for approx 30-40 min in a 180C oven

Cool on a rack and enjoy!

  1. They sure do! Just had the last 2 for morning snack with Master G in the park. Am considering making juice just to get mush again
